A delicacy! The closest resemblance I can give is to mutton. Had the same color, texture, and
smell as mutton. No "gamey" flavor whatsoever. The whole family loved it! This is how my wife prepared it:
Soaked the dressed raccoon in salt water for a day. Rinsed well, trim fat.
Basted with onion & garlic sauce. Roasted in oven for 20 min. per pound at 350 degrees (2
1/2 hours). Served with baked potatoes & corn. Delicious!
